Karela Express Recipe Contest Win Prizes Bitter Gourd Stir-Fry (Karela Sabzi)
Ingredients:
- Bitter gourd (karela): 3 medium-sized
- Onion: 2 medium, thinly sliced
- Mustard seeds: 1 tsp
- Turmeric powder: ½ tsp
- Red chili powder: 1 tsp
- Coriander powder: 1 tsp
- Salt: to taste
- Jaggery: 2 tsp (optional, to reduce bitterness)
- Cooking oil: 2 tbsp
Instructions:
- Prepare the Bitter Gourd: Wash and slice the bitter gourds thinly. Sprinkle salt on the slices and let them rest for 30 minutes. Squeeze out the water to reduce bitterness.
- Cook: Heat oil in a pan. Add mustard seeds and let them splutter. Add the sliced onions and sauté until golden. Toss in the bitter gourd slices and sauté for 5-7 minutes.
- Season: Add turmeric, chili powder, coriander powder, and salt. Mix well. Add jaggery for a mild sweetness and cook for another 10 minutes until tender.
- Serve: Serve hot with roti or steamed rice.

Ingredients:
- Bitter gourd (karela): 2 medium-sized
